We survived the 6 week Challenge!

Today marks the 6 week point in the Eat to Live Plan by Dr. Fuhrman.  We found this plan in Oprah Magazine in an article about nutrients.  Dr. Fuhrman recommends that you eat 90% plants and 10% everything else.  That means no Dairy, no Meat, no Flour, no Fat and no Sugar.   We did cheat a bit.  We ate chicken and spinich brats for Fourth of July.  We had brats for my Beer, Bats and Brats event at work and I lost my mind at a Catch Phrase party and ate FOUR pizza squares.  All along we have had a little alcohol here and there depending on the event and I have eaten salt the whole time ( I figured I had given up everything else I enjoyed in life) and my husband drank coffee the whole time.  But neither of us at RED Meat, Chicken (except the chicken brats), Pork or any lunchmeat.  We had NO bread (except my pizza binge) and NO  dairy.   Dr. Furhman wants you to ultimately eat 90% plants and the other 10%  anything else you want.  I figured the alcohol was my 10% most of the time.  I am amazed we did this well!  And I fee so much better!

I have to say it really has been easier than I ever would have thought.  I haven’t been dreaming of big jucy steaks or pork chops.  I was at a resturant on Friday and ordered an omelet with avacado and bacon.  The bacon threw me off!  I used to think of bacon as the CANDY OF MEAT and hear I was not eating an omelet because of the taste of bacon!  What the heck happened to me?

I can tell you my clothes are looser.  I need to loose about (?) more pounds but it is coming off nicely and without much pain or starvation.  I thought I would be hungary.  I am not.  I think the Shakeology Shake is what has made the difference.  At least a part of it.  It  tastes great and I mix it with ice in the morning and use it as a chocolate shake.  www.shakeology.com/seattle  Robert and I were both having huge issues with our blood sugar.  Robert is NOW OFF HIS INSULIN AND HAS LOST ABOUT 20 POUNDS.  My blood sugar is great too.  We are both taking oral drugs but NOT for long ……….  My blood sugars were 240 in the morning and now they are 111 to 130 !  NORMAL!




We watched the movie Fat, Sick and Nearly Dead and because of that we have decided to go on a juice fast.  I have NO idea how long I can do this but I will start it and see what happens.  http://www.fatsickandnearlydead.com/

Pattypan Squash Casserole GREAT!

Pattypan Squash Casserole

2 pounds of squash (I used peeled Zucchini and Pattypan)

1 Chopped onion

1 Cup Shredded Carrots ( not sure I would use that many again)

Basil ( I actually made an entire layer of basil leaves)

1 Cup of Vegatable Broth

Rice or Soy Mozzerrella Cheese ( one Packet)

Tofu Sour Cream ( one carton………..I used it like ricotta and made a layer of it)

1 Box Stove top stuffing

Salt to taste

Preheat oven to 350 degrees.

Dump the stuffing on the bottom of the pan.  Cut the squash in thin slices and layer in the pan.  Put in a sprinkling of shredded carrots.  Make a layer of basil.  Spread globs of sour cream on the basil.  Pour in the Vegatable Broth.   Add another layer of squash then sprinkle on Cheese mixture.

Cook for about 45 minutes or until the squash is soft to taste.

About six weeks ago I found an article in Oprah’s magazine that was about a guy who traveled in Central America in search of nutrients that we are missing in our lives.  http://www.magarena.com/Good-Morning-World-11560/

In this article they talked about a book by Furman called Eat to Live.  This isn’t just vegan ( and it has nothing to do with eating plants to save animals )  It is REALLY plant based.  It is 90% plant and bean based and 10% everything else.

I started this because I am 52 and weigh WAY too much.  I am diabetic (type II) I might tell you later HOW much I weighed but not yet.  At this point I need to lose weight, get my blood sugar down to normal levels and get healthy.  I feel like shit and I am tired all the time.  ALL the time.  My feet hurt and I can’t think straight.  Also in this article was a mention of the nutrients in something called Shakeology.  It can be found on a site called www.beachbody.com.    Well I can promise you that I was not at all excited to go to a site called BEACH BODY with all these sculped bodies  to find these nutrients.  But I did anyway.  It costs $119.00 per month and has a money back garantee and I promise you I had every intention of sending it back if it didn’t work.  They have very good ,very intensive nutritional information and because I am diabetic I took it to my doctor along with the book called Eat to Live and showed it to her.  She was very impressed.  They have the glycemic index on the website and they have a food pyramid in the Eat to live book and it all exctited Dr. Covault.

My husband decided to try this with me.  He was also Type II diabetic but he is on insulin.

My daughter found someone on twitter she had been talking to who sold Shakeology at shakeology.com/seattle and I got two samples from her.  I bought the Shakeology and started drinking it for breakfast a week before the diet.  No big difference but it tasted good and I added ice and water to get a chocolate shake.

We are now in week FOUR and all is well!  I was telling my daughter today I feel better.  I don’t know if it is the shakeology or the lack of meat, flour, sugar and dairy or the fact that I have lost 12 pounds, but I do feel better.  It may be the new shoes or it may be the Shakeology.  My mind is clearer, I feel more energy.  I actually went to the dog park yesterday and walked my dogs.  Things are looking up.
